The Bourgogne Côte d'Or Pinot Noir is a wine that showcases the characteristics of its region. Eighty percent of the vintage is sourced from the Cote de Nuits, while the remaining twenty percent comes from the Cote de Beaune. The primary grape variety used in this wine is Pinot Noir. The soil composition plays a crucial role in the wine's profile, consisting mainly of clay and marl mixed with stony limestone. The maceration process involves using 5% to 10% whole bunches, followed by five days of cold maceration. During the initial phase of alcoholic fermentation, one "pigeage" is performed each day, transitioning to pump-overs throughout the maceration for gentle extraction. The total vatting time for this wine is 15 days, and it is pressed using a pneumatic press. After pressing, the wine undergoes a total elevage of 15 months in oak barrels. Notably, no fining or filtration is performed prior to bottling, and only one racking is carried out during the ageing process.
