A lovely dance between Trebbiano (60%), Malvasia (20%), and Grechetto (20%) this dessert wine is so unbelievably delicious we almost find ourselves at a loss for words.
This is the signature wine of Santa Vittoria. Jasmine, Oloroso and nut on the nose, caramel, honey and toffee flavours run deep and beautifully entwined through this wine. Delicious.
Some bunches are hung from the ceiling to dry, others dry on ventilated trays. Botrytis is encouraged during the drying process which means great vigilance is needed to make sure nothing goes wrong, humidity especially must be monitored in the drying rooms, the windows are opened during the day and closed at night.
The grapes are dried for approximately 4 months. After pressing the must is fermented in small barrels and when the fermentation has finished, the barrels are sealed with wax and left for 5 years.
The vineyards are south facing and planted ‘single spur’ at a density of 3800 plants per hectare.
