Xavière’s 2020 grolleau noir is an equal parts blend of three separate vinifications: carbonic maceration with aging in vats, partial whole-cluster with aging in tank and completely destemmed with aging in 5-10 year old oak barrels.
Brimming with tart blackberry and blueberry, the wine retains a deep vein of savory, almost animalistic notes that make this wine a balanced, unique powerhouse.
