Despite its recent surge in popularity, Pet-Nat is actually far from being the new kid on the block. This spritzy sparkler dates back pre-Champagne, making it the original way in which sparkling wine was made. Long story short, the wine is bottled prior to fully completing its first fermentation, allowing carbon dioxide to be produced in the enclosed bottle by the natural sugars found in the grapes. This production method is contrary to the way in which Champagne is produced, where the base wine is fully fermented, then undergoes a secondary fermentation in bottle with the addition of yeast and sugar. It’s elegant and mostly clear, rather than cloudy and funky as some Pet-Nats tend to be. Not that we’re knocking funky ones - you know we love our cloudy fizz - but this one is perfect when you’re sharing with unsuspecting relations over pre-feast snacks.
