Kabaj (Ka-bye) have farmed their vineyards for many generations. When Katja Kabaj met French oenologist Jean-Michel Morel after his stint at an Italian winery, they fell in love and eventually married. Jean-Michel brought some of those Italian and French sensibilities to the winery along with his fondness for working with amphorae. 

Rebula is the most famous indigenous white grape in Brda. It’s the Slovenian name for Ribolla Gialla and it is a grape that takes well to skin contact wine making - Right across the border in Italy are some of the best known houses for Orange wine. Brda is situated in the perfect position between the foothills of the Alps and the Adriatic, this provides mountain and sea influence. The area is know for a special soil type called, plonka, which are large stones that allow for drainage, heat absorption and mineral influence - also marl. 

This bottling spends 30 DAYS on the skins and is a rich orange wine. Aged in OLD french oak for one year, with no added yeast or bacteria, spontaneous fermentation and no fining. Jean only makes wine with the natural approach. He grew up in Bordeaux and studied winemaking in France & Georgia and this wine is a great example of both - it has tea -like complexity from long skin contact like a Georgian and elegance like traditional French bottlings.

Despite a month of skin contact, this is not an oxidatively styled orange wine, it rather a white wine with a more texture and structure. Distinctively spicy and orange hued, it has aromas of under-ripe cherry and white pepper, a honeyed texture and a lively mix of lemon pith, tangerine skin and passion fruit tea.
