Maestro de Destilado Gerónimo Rosainz brings us this unique Mexican distillate, which differentiates itself from Mezcal in that the agave hearts are not harvested and roasted prior to fermentation. Rather, the sap or honey is extracted from the agave while it's still in the earth. This sap is then fermented into "pulque", a 1000 year old fermented beverage that has been documented as early as the Aztec empire. When the alembic still was introduced to Mexico, hundreds of years ago, this fermented pulque was distilled and destilado de pulque was created. Creamy texture, bright tropical fruit notes and mild salinity on the finish. ¡Salud!
