The grapes are Organic. 33% Pinot Noir, 1/3 Cabernet Franc, 1/3 Negrette & Cabernet Sauvignon. Volcanic mix of soils: rhyolite, quartz, purple schist, and clay. Vines age from 15-30+ years old. Fruit is picked, destemmed, then crushed and fermented with 8 days of pump-overs. Fermentation and ageing in temperature controlled stainless steel.
