Subtle, refined, delicious pastis for drinking or cooking

I was making winter cassoulet and asked for a reccomendation. I was delighted to have been introduced to Henri Baroudin. Beyond the anticipated star anise, there are notes of liquorice and cardamom. Herbs such as thyme, rosemary, sage and mugwort are sourced from the Alpes-de-Haute-Provence and the lavande of that region whispers an elegance into the bouquet.
