This is a blended Whiskey of 83% Oxacan green corn Whiskey and 17% Malted Barley with Aji Amarillo Peppers Finished in Sotol Cask.
Flatlander started by convincing farmer neighbors to dedicate acreage to growing Oaxacan Green Corn for this project. Another farmer friend who primarily cultivates hops happened to offer some aji amarillo peppers which seemed appropriate to add. This blended whiskey, distilled with aji, is finally aged in a used Sotol cask, imparting subtle smoke and vegetal notes. A whiskey like none other, that expresses the unique grain, a little kick, and the agave-like earthiness of the Desert Spoon. A daytime whiskey for the height summer out east.
This is a whiskey that expresses the intersection of agriculture, creativity, and community. A very Matchbook Whiskey.
