Whole bunch fermentation and no added sulfurs, 13 day maceration with only one gentle pressing afterwards. Elevage, which is the process of nurturing the wine from fermentation to barrel to bottling, is continued for 8-10 months in egg shaped tanks before actual bottling. The wine displays an explosive nose that unveils aromas of purple flowers with enticing acidity supported by a pronounced tannic structure.
