Though initially inspired by traditional Scottish whisky, Torii envisioned a Japanese approach by choosing a terrain and climate completely different from those of Scotland. Hibiki Japanese Whisky 'Harmony' Japan: As the shortage of aged Suntory stock grew (including Yamazaki & Hakushu), the renowned Hibiki 12 Year-Old was replaced with "Harmony". The distillers worked hard to combine malt from Yamazaki and Hakushu, and grain from Chita (a grain whisky only available in Japan) to create a smooth, easy-drinking NAS (no age statement) blend. We can assume this whisky is younger than 12 years, because that was the point of creating it, but it's very difficult to find out what the average age of whiskeys included is otherwise. Nonetheless, it's highly regarded and a great stepping stone in the marketplace of fine Japanese sipping whiskies. Rose, lychee, hint of rosemary and sandalwood on the nose; white chocolate, candied orange peel on the palate with a subtle hint of Mizunara (Japanese Oak) on the finish.

Spiritual and deep, made at Yamazaki Distillery, the birthplace of Japanese whisky, its signature multi-layered taste is highly praised by whisky connoisseurs all over the world. Peach, pineapple, grapefruit, candied orange and Mizunara on the nose; coconut, cranberry and butter on the palate with a sweet ginger, cinnamon and long finish.
Suntory Whisky 'The Hakushu' 12 Year Single Malt Japanese Whisky, Japan: From Suntory’s mountain forest distillery, nestled deep in Mt. Kaikomagatake, Suntory Single Malt Whisky Hakushu is the fresh and gently smoky single malt whisky with herbal notes that is the revelation of Japanese single malts. Straight from the untouched forests, soft and crisp waters and mountains of the Southern Japanese Alps, it is no wonder that Hakushu is a "green and fresh" whisky. Created by the dream for a new type of whisky from Keizo Saji, the second master blender, the unique taste made is distinct. Basil, pine needle and green apple on the nose; sweet pear, mint and kiwi on the palate with a subtle smoke and green tea finish.
