From a family owned bodega founded in 1841, this Oloroso has matured in cask for nine years with no flora. This oxidation gives the distinctive color and aromas of roasted nuts over dense layers of reduced balsamic and raw maple with a long finish.
Pairs well with: Spanish sheep's milk cheeses, like the soft-but-aged torta del Cesar or a more classic Manchego, quince paste and marcona almonds. Simply delicious!
