Gaspard offers here, a great example of varietal typicity of Chenin Blanc and with a couple of years of age, it is showing perfectly, with the braised pears and meyer lemon foam one might expect beautifully balanced by crystalline winter's night acidity on the elegant and lifted finish. 

Gaspard is organic and practices minimal intervention but offers amazing value for the money.
